Dầu cháo quảy is an older Southern Vietnamese form of dầu cháo quẩy or giò cháo quẩy: elongated fried dough, often made as two joined strips and eaten with porridge, noodle soups, or on its own. The name is a phonetic borrowing related to Cantonese 油炸鬼 (jau4 zaa3 gwai2), not a compositional Vietnamese phrase meaning oil, porridge, and carrying.

Món thường có hai dải bột dính nhau, nhưng kích thước, độ giòn, nguyên liệu tạo nở và cách ăn tùy hàng quán; không mặc định món ngọt, luôn ăn với cháo, không gluten, chay hoặc an toàn với mọi dị ứng. Dạng dầu cháo quẩy là biến thể chính tả gần hiện nay; giò cháo quẩy và quẩy đã được nối về mục quẩy riêng, không để đầu mục cũ giành toàn bộ kết quả tra cứu của từ phổ thông.
