Quết means to pound or work ingredients until fine, smooth, and cohesive, or to spread a sticky coating onto a surface.

`Quết` có hai nét chính. Một là giã, đánh hoặc trộn nguyên liệu đến nhuyễn, mịn và quyện: `quết giò`, `quết chả`, `quết bánh phồng`, *pound/work/beat into a cohesive paste*. Bản dịch không mặc định dùng cối; máy trộn vẫn có thể `quết` nếu tạo cấu trúc ấy. Hai là phết chất dính hoặc sệt lên bề mặt: `quết keo`, `quết sơn`, *spread, coat, daub*. `Quết` không tự cho biết nguyên liệu đã chín, an toàn, đúng độ dai hay đúng công thức. Ở Nam Bộ, `quết bánh phồng` là cách nói văn hóa ẩm thực quen tại những nơi còn làm bánh thủ công; không biến một quy trình địa phương thành công thức duy nhất. Phân biệt `quết` với `quét` phủ rộng bằng chổi, `quệt` để lại vệt và `giã` chỉ nhấn tác động làm nhỏ. Tab ghi `𢵮` như một dạng Nôm có nguồn.
